Method
- Preheat your oven to 350°F (175°C).
- Place the acorn squash halves cut-side down on a baking sheet and bake for 30 to 45 minutes, until the flesh starts to soften.
- Remove from the oven. Transfer one half to a baking dish, cut-side up. Add the butter and brown sugar into the center.
- Place the second squash half cut-side down on top of the first to seal it like a lid.
- Return to the oven and bake for another 30 minutes, or until the squash is soft and fully cooked.
- Serve hot and enjoy!
Notes
You can eat the skin of roasted acorn squash if it’s washed well and baked until tender. For extra flavor, try adding cinnamon, raisins, or a drizzle of maple syrup. Leftovers keep well in the fridge for up to 4 days.
