Ingredients

Pork Chop Seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon coconut sugar optional for low-carb diets
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon ground mustard
  • 1 teaspoon sea salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
Pork Chops
  • 4 pieces bone-in pork chops 1.5 inches thick
  • 4 tablespoons olive oil

Equipment

  • Baking sheet
  • Small Mixing Bowl
  • Instant-Read Thermometer
  • Parchment paper

Method

  1. Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper or lightly grease with cooking oil.
  2. Mix all seasoning ingredients (chili powder, coconut sugar, smoked paprika, dried thyme, ground mustard, sea salt, onion powder, and black pepper) in a small bowl until well combined.
  3. Place the bone-in pork chops on the prepared baking sheet. Drizzle olive oil over each chop, then rub or brush the oil evenly on both sides.
  4. Season both sides of each pork chop generously with the homemade spice mixture. Press the seasoning gently into the meat to ensure it adheres well.
  5. Bake the seasoned pork chops for 25 minutes, or until the internal temperature reaches 145 degrees Fahrenheit when checked with an instant-read thermometer.
  6. Remove the cooked pork chops from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat.

Notes

Cooking Time Guidelines: The 25-minute cooking time is for bone-in pork chops that are approximately 1.5 inches thick. Adjust cooking time based on thickness - about 8-10 minutes per 1/2 inch of thickness at 400°F.
Temperature Tips: Always use an instant-read thermometer for accuracy. Pork chops are safe to eat at 145°F internal temperature followed by a 3-minute rest.
Browning Options: For extra color, sear chops in a hot skillet for 1-2 minutes per side before baking, or use the broiler for the last 2-3 minutes of cooking. Reduce oven time by 4-5 minutes if pre-searing.
