- Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper or lightly grease with cooking oil.
- Mix all seasoning ingredients (chili powder, coconut sugar, smoked paprika, dried thyme, ground mustard, sea salt, onion powder, and black pepper) in a small bowl until well combined.
- Place the bone-in pork chops on the prepared baking sheet. Drizzle olive oil over each chop, then rub or brush the oil evenly on both sides.
- Season both sides of each pork chop generously with the homemade spice mixture. Press the seasoning gently into the meat to ensure it adheres well.
- Bake the seasoned pork chops for 25 minutes, or until the internal temperature reaches 145 degrees Fahrenheit when checked with an instant-read thermometer.
- Remove the cooked pork chops from the oven and let them rest for 5 minutes before serving. This allows the juices to redistribute throughout the meat.

Cooking Time Guidelines: The 25-minute cooking time is for bone-in pork chops that are approximately 1.5 inches thick. Adjust cooking time based on thickness - about 8-10 minutes per 1/2 inch of thickness at 400°F.
