  • 2 slices bacon diced
  • 1 small sweet onion diced
  • 1 whole bell pepper diced
  • 2 cloves garlic minced
Seasonings
  • 1 tablespoon smoked paprika
  • 1/4 teaspoon chipotle chili powder up to 1/2 teaspoon for more heat
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper freshly cracked
Sauce Components
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons BBQ sauce
  • 2 tablespoons ketchup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon brown sugar
  • 2 cans baked beans 22-ounce cans, Bush's Grillin' Beans recommended
Optional Topping
  • 2 slices bacon for topping

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Heat a large oven-safe skillet over medium-low heat. Add the diced bacon and cook until crispy and most of the fat is rendered, about 5-7 minutes.
  3. Add the diced onion, bell pepper, and minced garlic to the skillet with the bacon. Cook, stirring frequently, until the vegetables soften, about 5 minutes.
  4. Stir in the smoked paprika, chipotle chili powder, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  5. Add the apple cider vinegar, BBQ sauce, ketchup, Dijon mustard, and brown sugar. Stir until well combined.
  6. Pour the canned beans directly into the skillet and stir to combine. Bring the mixture to a boil, then remove from heat.
  7. Taste the mixture and adjust seasonings as needed. If desired, lay additional bacon strips on top of the beans.
  8. Transfer the skillet to the preheated oven and bake for 30-35 minutes, or until bubbly and syrupy.
  9. Remove from oven and let cool slightly before serving.

Notes

Make-Ahead Tips: Cook the beans in the skillet, let cool to room temperature, cover and refrigerate. Bake when ready to serve.
Storage: These beans freeze well for up to 3 months in freezer-safe containers.
