- Preheat oven to 350°F (175°C). Lightly grease a 9x5 inch loaf pan with cooking spray or oil.
- In a small bowl, whisk together glaze ingredients: 1/2 cup ketchup, apple cider vinegar, and brown sugar. Set aside.
- Place panko breadcrumbs in a large mixing bowl. Grate the onion directly over the breadcrumbs and mix well, ensuring all breadcrumbs absorb the onion juices.
- Add ground beef, eggs, minced garlic, Worcestershire sauce, 1/4 cup ketchup, chopped parsley, dried thyme, crumbled bouillon cubes, and black pepper to the bowl.
- Using your hands, gently mix all ingredients until just combined. Do not overmix as this will create a dense texture.
- Shape the mixture into a loaf, pressing firmly and smoothing any surface cracks. Transfer to the prepared loaf pan.
- Brush the top generously with half of the prepared glaze mixture.
- Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If excess fat has pooled, carefully pour it off.
- Continue baking for 30 more minutes, or until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before removing from pan and slicing into thick pieces. Serve with mashed potatoes and your favorite vegetables.
