Method
 

  1. Prepare the cucumber: Grate the cucumber using the largest holes on a box grater. Place the grated cucumber on a clean kitchen towel.
  2. Remove excess water: Gently squeeze the cucumber in the towel to remove as much moisture as possible. You can also press it lightly between paper towels. This step is crucial for preventing watery tzatziki.
  3. Combine ingredients: In a medium bowl, mix the squeezed cucumber with Greek yogurt, lemon juice, olive oil, grated garlic, salt, dill, and mint (if using).
  4. Chill and serve: Refrigerate the tzatziki for at least 30 minutes before serving to allow flavors to meld together. Stir gently before serving if needed.
