  • 1 medium pineapple peeled, cored, and chopped into ½-inch pieces (about 5 cups)
  • 1 pound strawberries hulled and chopped
  • 3 kiwis peeled, quartered lengthwise, and sliced
  • 2 cups seedless grapes halved
  • 1 pint blueberries
  • 3 mandarin oranges peeled and segmented
Honey-Lime Dressing
  • 1 lime juiced
  • 1 mandarin orange juiced
  • 1 tablespoon honey or maple syrup

Method
 

  1. Prep the pineapple: Peel, core, and chop into half-inch pieces (about 5 cups). Pro tip: buy pre-cut pineapple to save 15 minutes.
  2. Prepare strawberries: Hull and chop into bite-sized pieces.
  3. Cut the kiwis: Peel, quarter lengthwise, then slice into pieces.
  4. Halve the grapes: Cut seedless grapes in half for easier eating.
  5. Keep blueberries whole: No prep needed for these.
  6. Segment mandarin oranges: Peel and separate into segments, removing any seeds.
  7. Make the dressing: Squeeze lime and mandarin orange juice into a small bowl. Add honey and whisk until smooth.
  8. Combine everything: Mix all fruits in a large bowl. Pour dressing over fruit and toss gently to coat.

Notes

Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
Make-ahead tip: You can prep the fruit up to 4 hours ahead, but add the dressing just before serving to maintain the best texture.
Substitutions: Instead of mandarins, use 1 peeled and diced mango, 2 chopped peaches, or nectarines. Instead of strawberries, use blackberries or raspberries (add these last since they're delicate).
