- 2 cups fresh ripe mango chunks (from about 2 medium mangoes)
- 1 cup pineapple juice
- ½ cup sweetened cream of coconut (like Coco Lopez)
- ½ cup full-fat coconut milk (canned)
- 1 tablespoon fresh lime juice
- 2 cups ice cubes
- Fresh mango slice or maraschino cherry or mint sprig (Optional for garnish)
Prep Mango: Wash, peel, and chop the fresh mangoes.
Combine: Add mango chunks and pineapple juice and sweetened cream of coconut and coconut milk and lime juice and ice to the blender.
Blend: Put the lid on. Blend on high for 30-60 seconds until smooth and creamy.
Adjust: Add more juice/milk if too thick. Add more ice if too thin. Blend again quickly.
Serve: Pour into chilled glasses right away.
Garnish: Add a mango slice or cherry or mint if you want.
