Ingredients
  

  • 2 cups fresh ripe mango chunks (from about 2 medium mangoes)
  • 1 cup pineapple juice
  • ½ cup sweetened cream of coconut (like Coco Lopez)
  • ½ cup full-fat coconut milk (canned)
  • 1 tablespoon fresh lime juice
  • 2 cups ice cubes
  • Fresh mango slice or maraschino cherry or mint sprig (Optional for garnish)

Method
 

  1. Prep Mango: Wash, peel, and chop the fresh mangoes.
  2. Combine: Add mango chunks and pineapple juice and sweetened cream of coconut and coconut milk and lime juice and ice to the blender.
  3. Blend: Put the lid on. Blend on high for 30-60 seconds until smooth and creamy.
  4. Adjust: Add more juice/milk if too thick. Add more ice if too thin. Blend again quickly.
  5. Serve: Pour into chilled glasses right away.
  6. Garnish: Add a mango slice or cherry or mint if you want.

Notes

  • Use ripe, sweet mangoes for the best taste.
  • Make sure to use sweetened cream of coconut for the right flavor.
  • Chilling your glasses first makes the drink extra nice.
  • Best when fresh. If you have leftovers, keep them covered in the fridge for up to 1 day and re-blend before serving.
