Equipment

  • Muddler
  • Strong Glass (Highball glass recommended)
  • Blender (optional, for smoother puree)
  • Measuring Spoons or Jigger
  • Stirrer or Long Spoon

Ingredients

  • 1/2 Ripe Mango (makes about 2 oz puree)
  • 8-10 Fresh Mint Leaves
  • 1 oz Fresh Lime Juice (about 1/2 lime)
  • 1/2 oz Simple Syrup (adjust to taste)
  • 4 oz Club Soda (chilled)
  • Ice Cubes
  • 1 Mint Sprig (for garnish)
  • 1 Lime Wedge (for garnish)

Instructions

  • Blend peeled, chopped mango until smooth. (Or mash very well with a fork). Set aside 2 oz puree.
  • Place mint leaves and fresh lime juice in a strong glass.
  • Press mint gently 3-4 times with a muddler to release oils. Do not shred the leaves.
  • Add 2 oz mango puree and the simple syrup to the glass.
  • Fill the glass almost completely full with ice cubes.
  • Pour chilled club soda over the ice until the glass is full.
  • Use a long spoon to stir carefully from the bottom up, mixing without losing fizz.
  • Garnish with a fresh mint sprig and a lime wedge. Serve immediately.

Notes

  • Mix equal parts hot water and sugar until dissolved. Cool before use.
  • Use ripe, sweet mangoes (like Honey/Ataulfo) for best flavor and texture.
  • Bruise mint lightly to avoid bitterness.
  • Taste and add more simple syrup or lime juice if needed.
  • For a pitcher, multiply ingredients. Muddle in pitcher, add puree/syrup. Add ice and club soda just before serving.
