Ingredients

  • 1/2 Ripe Mango (makes about 2 oz puree)
  • 8-10 Fresh Mint Leaves
  • 1 oz Fresh Lime Juice (about 1/2 lime)
  • 1/2 oz Simple Syrup (adjust to taste)
  • 4 oz Club Soda (chilled)
  • Ice Cubes
  • 1 Mint Sprig (for garnish)
  • 1 Lime Wedge (for garnish)

Equipment

  • Muddler
  • Strong Glass (Highball glass recommended)
  • Blender (optional, for smoother puree)
  • Measuring Spoons or Jigger
  • Stirrer or Long Spoon

Method

  1. Blend peeled, chopped mango until smooth. (Or mash very well with a fork). Set aside 2 oz puree.
  2. Place mint leaves and fresh lime juice in a strong glass.
  3. Press mint gently 3-4 times with a muddler to release oils. Do not shred the leaves.
  4. Add 2 oz mango puree and the simple syrup to the glass.
  5. Fill the glass almost completely full with ice cubes.
  6. Pour chilled club soda over the ice until the glass is full.
  7. Use a long spoon to stir carefully from the bottom up, mixing without losing fizz.
  8. Garnish with a fresh mint sprig and a lime wedge. Serve immediately.

Notes

  • Mix equal parts hot water and sugar until dissolved. Cool before use.
  • Use ripe, sweet mangoes (like Honey/Ataulfo) for best flavor and texture.
  • Bruise mint lightly to avoid bitterness.
  • Taste and add more simple syrup or lime juice if needed.
  • For a pitcher, multiply ingredients. Muddle in pitcher, add puree/syrup. Add ice and club soda just before serving.
