Brownie Batter
  • 1 1/2 cups granulated sugar
  • 3/4 cup all-purpose flour
  • 2/3 cup cocoa powder sifted if lumpy
  • 1/2 cup powdered sugar sifted if lumpy
  • 1/2 cup dark chocolate chips use high-quality chocolate
  • 3/4 teaspoon sea salt
  • 2 large eggs
  • 1/2 cup oil canola or olive oil
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 325°F. Line an 8×8 inch baking pan with parchment paper and lightly spray with cooking spray.
  2. In a medium bowl, combine granulated sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
  3. In a large bowl, whisk together eggs, oil, water, and vanilla extract.
  4. Sprinkle the dry ingredients over the wet ingredients and fold together until just combined. The batter will be thick.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
  6. Bake for 40-48 minutes or until a toothpick inserted comes out with a few moist crumbs.
  7. Let the brownies cool completely in the pan for at least 2 hours before slicing.

Notes

For best results, use a metal 8×8 inch pan. Avoid overbaking—brownies continue to cook as they cool. For cleaner slices, wipe your knife between cuts.
