Ingredients
  

Main Ingredients
  • 1 cup frozen pineapple chunks If using fresh pineapple, use 3/4 cup chunks plus 1/2 cup ice
  • 1/2 cup pineapple juice unsweetened preferred
  • 1/2 cup cream of coconut shake can well before using - not coconut cream
Garnish
  • 2 wedges fresh pineapple for garnish
  • 2 pieces pineapple leaves optional, for garnish

Equipment

  • High-speed blender
  • Measuring Cups
  • Tall glasses

Method
 

  1. Add the frozen pineapple chunks, pineapple juice, and cream of coconut to a high-speed blender.
  2. Blend on high speed for about 30 seconds until the mixture is smooth and creamy with no chunks remaining.
  3. Pour immediately into chilled tall glasses.
  4. Garnish each glass with a fresh pineapple wedge and pineapple leaf if desired. Serve immediately.

Notes

Storage Tips: These drinks are best enjoyed immediately as they will melt as they sit. If the drinks become too thin, re-blend with a handful of ice.
Make-Ahead: You can prep and measure all ingredients in advance, but don't blend until ready to serve.
Scaling: This recipe makes about 16 ounces and can easily be doubled or tripled for larger groups.
Variations: For a colorful twist, add 2 tablespoons of grenadine to half the mixture for a "Malibu Sunrise" effect. For rum flavor without alcohol, add a few drops of rum extract.
Equipment Tip: Chill your glasses in the freezer for 10 minutes before serving to keep drinks cold longer.
