- Add the frozen pineapple chunks, pineapple juice, and cream of coconut to a high-speed blender.
- Blend on high speed for about 30 seconds until the mixture is smooth and creamy with no chunks remaining.
- Pour immediately into chilled tall glasses.
- Garnish each glass with a fresh pineapple wedge and pineapple leaf if desired. Serve immediately.
Notes
Storage Tips: These drinks are best enjoyed immediately as they will melt as they sit. If the drinks become too thin, re-blend with a handful of ice.
Make-Ahead: You can prep and measure all ingredients in advance, but don't blend until ready to serve.
Scaling: This recipe makes about 16 ounces and can easily be doubled or tripled for larger groups.
Variations: For a colorful twist, add 2 tablespoons of grenadine to half the mixture for a "Malibu Sunrise" effect. For rum flavor without alcohol, add a few drops of rum extract.
